Nice to meet you in Spanish: nobody says the long version
Mucho gusto en conocerle is correct, formal, and about three words longer than anything you'll hear.
Mucho gusto is complete on its own: "a pleasure". Add en conocerle and you've moved to a business card exchange. In everyday introductions, across Mexico and Central America, it's mucho gusto, sometimes with the name (mucho gusto, Ana), or encantado / encantada matching your own gender.
The reply that fits any of these is igualmente (likewise) or el gusto es mío (the pleasure is mine), which is a touch warmer. If someone introduces you and you missed the name, perdón, ¿cómo te llamas? is fine; nobody minds.
Where le does earn its place: le presento a… when introducing someone to a person you address as usted. The formality lives in the introduction, not in the greeting that follows.
